I'm trying out for a AAA team (1st time) and the coach told me to register for the goalie sessions and I just need to know what am basically going to do there.

Expect a lot of movement stuff. Know/execute your angles best you can. Do the best you can, and work you a$$ off. DONT get mad or bent out of shape if a bad goal goes in, that will ruin you in the evaluaters eyes.

I'm in ok shape 6'0 - around 160-175. Got just a bit of fat. Would this effect me in anyway? Sad

It might make you slower, but it wont affect you that much. Work on your foot speed also.

wtf...I'm 6'1" and 200lbs. What do you mean by "just a bit of fat"? Your toe a little oversized?

Anyways you sound like you're actually might be a bit overlooked because you're under weight, not over.

This might sound confusing, but it wouldn't hurt me if I lost 10 pounds and gained it back by muscle.

Well I'm solid muscle below the waist...hardly any fat at all. I just have a larger than normal or "beer" belly.

Foot speed is not really an issue when you're 6'+

The biggest thing to work on is upper body, form of butterfly, and angles. Because I'm bigger it takes me two shuffles to cover the same are that my 5'6" brother covers in 4. Add in the fact that our natural net closure is much more than that of a smaller goalie and coaches typically look for the tall, muscular goalies over the shorter faster goalies.

Work on perfecting the butterfly and hand eye coordination since once we're down, shooters go high. If you're able to routinely blocker and trap pucks while on your knees...you're golden.

I have a little fat below my waist, though most of my fat is at my belly too.

It will depend highly on the particular team your tryiing out for and what there goal tending philosophy is.
goalie boy does have it right you can expect a lot of movement and angles, they will first see that you know all the fundamentals.
Then you can expect them to evaluate heaviest when your tired, and they will judge you on how you respond to goals as mentioned as well, it is highly subjective, some like a goalie who acts the same as if nothing happened, others like goalies that get visibly mad, in the end they all look to see how you respond to the situations that follow. Many to most AAA teams any more have excellent goalie coaches on staff, others have ones that work out the goalies. The truth is they will see exactly the kind of goalie you are, what your weakness are and strengths, listen, try to adapt to any coaching you are given during the session.
Then when all is said and done ask for the full blown evaluation of what they saw and ask them if they have any questions for you. Be strong, determined, respectful and composed.
