Go dull and steadily get sharper. 1/2-3/4 is a good starting point I think. Eventually you will find what you like.

I get mine at 1". I also have my goalie blades profiled so their is some radius to them. I wear CCM skates and from the factory, they were flat as a board and basically unskateable to me.

If you can find a sharpener that is also a goalie, tell them what you like and what your style is. They'll be able to come up with something for you if they're any good.
I took mine to a sharpener that I've actually played against last year, told him I'm a butterfly style goalie that likes to skate out and play the puck. I also play on ice that is fairly hard. He has seen me play lots, so I didn't have to tell him anymore then that. He took my skates and profiled them then sharpened them to 5/8th. They're perfect.
